Making Fondue for the first time.a few quick questions?

Hello. I’m making Fondue for the first time tonight with a friend for our movie night and just have a few quick questions. The recipe calls for 2 cups of dry white wine -what kind would be best, or does it not really matter that much? If it does, how much would that kind of wine cost?
Second, the recipe calls for 1 lb of cheese total. There are only two of us. Is that too much cheese? Should we maybe do half what the recipe calls for (along with half of everything else so that it’s proportionate of course)?
And, of course, and tips or advice on a first time fondue-er would be appreciated =)

It matters!! You do NOT want to use something sweet, such as a Reisling. I usually use Pinot Grigio or Chardonnay, because I can drink the leftovers
Also, DEFINATELY only use a good wine that you would drink, otherwise it will compromise the quality and flavor of your fondue. I am an avid maker and consumer of fondue and can usually eat the whole lb. that I make just for me (and I am a 130lb. 5’10 female!)…but I LOVE cheese! Also make sure you rub your pot with a cut garlic clove before adding all the other ingredients. Usually most fondue recipes call for Kirsch, but I usually do with out it and don’t notice too much of a difference; it still comes out just as great! Hope this helps and happy dipping!
